    About this recipe: A simple recipe for a delicious courgette side dish. The cheesy breadcrumbs crisp up in the oven giving the slices of courgette an added crunch!

    Serves: 4 

    • 2 medium courgettes, sliced in 1cm thick rounds
    • 2 tablespoons extra virgin olive oil
    • 3 tablespoons grated Parmesan cheese
    • 2 tablespoons breadcrumbs
    • 1 teaspoon fresh or dried oregano
    • salt and pepper, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease a baking dish or line a baking tray with baking parchment.
    2. In a large bowl, mix courgette slices and olive oil. Toss to coat well.
    3. In another bowl mix grated Parmesan, breadcrumbs, oregano, salt and pepper.
    4. Dip the oiled courgettes into the breadcrumb mixture and place on the baking dish, layering each slice close to the other.
    5. Bake and cook for 30 to 40 minutes. Turn when golden on one side to make a nice even, golden colour. Serve immediately.
