Maple syrup flapjacks

About this recipe: Delicious twist on regular flapjacks! Use your favourite Canadian maple syrup for the best result in flavour.

Makes: 12 flapjacks

  • 500g porridge oats
  • 250g butter
  • 250g soft brown sugar
  • 5 to 6 tablespoons maple syrup (e.g. Canada No.1 Medium)

  1. Pre-heat the oven to 180 C / Gas 4. Lightly grease a shallow baking tin.
  2. Soften butter in microwave for 20 to 30 seconds. Set aside.
  3. Sieve the brown sugar. If it is hard or lumpy, place in a microwavable bowl for 30 seconds covered with a damp piece of kitchen paper. Repeat as necessary. This will soften the sugar.
  4. Mix all ingredients together in a large mixing bowl. Press the mixture down evenly into the baking tin. Score the surface into 12 pieces.
  5. Bake for 20 minutes or until the flapjack is a light golden brown. Remove from the oven and let it cool in the tin for 10 minutes. It will be quite soft at this stage. But once it has cooled you can store it in the fridge in an airtight container. It will stay chewy.
