Serrano ham-wrapped roast asparagus

About this recipe: Such a beautiful way of observing this beautiful vegetable. Serve as a delicious starter or side dish to a larger meal. County Cork, Ireland

Serves: 6 

  • 500g asparagus
  • 9 slices Serrano ham
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 pinch coarse ground black pepper

Prep:20min  ›  Cook:15min  ›  Ready in:35min 

  1. Preheat the oven to 200 C / Gas 6.
  2. Cut the bottom inch off the asparagus and peel the remaining bottom inch.
  3. Wrap 3 asparagus tips in each slice of ham. Drizzle with the oil and balsamic and sprinkle with pepper.
  4. Roast in the preheated oven for 15 minutes until tender. Remove from the oven and serve.
