265g brown rice flour
135g sorghum flour
100g millet flour
30g chia seed powder
1 1/2 tablespoons baking powder
850g banana puree
90g chopped walnuts
120ml rice milk
120ml unsweetened apple sauce
120ml vegetable oil
1 3/4 teaspoons salt
1 1/2 teaspoons ground cinnamon

Whisk rice flour, sorghum flour, millet flour, ground chia seeds and baking powder together in a bowl. Whisk banana puree, walnuts, eggs, rice milk, apple sauce, oil, salt and cinnamon together in a separate large bowl. Whisk flour mixture into banana mixture until smooth, thick batter forms.
Heat a large non-stick pan over medium-high heat. Drop batter by large spoonfuls onto the pan, spreading as necessary to form a pancake. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
