Gluten free naturally sweetened banana pancakes

    A couple of years ago, our family went on a low sugar, dairy free and gluten free diet. We had to create our own recipes for the basics. This is our protein packed banana walnut and chia seed pancake recipe.

    • 265g brown rice flour
    • 135g sorghum flour
    • 100g millet flour
    • 30g chia seed powder
    • 1 1/2 tablespoons baking powder
    • 850g banana puree
    • 90g chopped walnuts
    • 3 eggs
    • 120ml rice milk
    • 120ml unsweetened apple sauce
    • 120ml vegetable oil
    • 1 3/4 teaspoons salt
    • 1 1/2 teaspoons ground cinnamon

    1. Whisk rice flour, sorghum flour, millet flour, ground chia seeds and baking powder together in a bowl. Whisk banana puree, walnuts, eggs, rice milk, apple sauce, oil, salt and cinnamon together in a separate large bowl. Whisk flour mixture into banana mixture until smooth, thick batter forms.
    2. Heat a large non-stick pan over medium-high heat. Drop batter by large spoonfuls onto the pan, spreading as necessary to form a pancake. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

    These are pleasing for a breakfast, or even an afternoon snack with your tea. I made a couple of changes by using buckwheat flour instead of millet and accidentally forgot the chia seeds.
