Special angel cake

    This is a lovely light cake with a unique taste and so lovely.

    Makes: 1 cake

    • 4 oz plain flour
    • 3 oz icing sugar
    • 5 1/2 oz caster sugar
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 8 egg whites (room temperature)

    1. Preheat the oven to 180 C / Gas 4.
    2. Whisk the egg whites until nice and frothy. Add caster sugar, vanilla and salt, then whisk to stiff peaks.
    3. Combine flour and icing sugar. Gradually fold dry mixture into the egg whites, taking care not to over-mix. Spoon into a cake tin.
    4. Bake cake on a middle shelf for 35 minutes.
    5. Remove cake from oven, then turn it upside down onto a up turned mug for 2 hours. (This is required, otherwise the cake will go flat.)
    6. After this, slide your knife around the edges and turn out. Eat with fruit, ice-cream, fresh cream, etc.
