    About this recipe: This is a lovely light cake with a unique taste and SO LOVELY

    Ingredients

    • 4 oz plain flour
    • 3 oz Icing sugar
    • 5 and a half oz caster sugar
    • A quarter of a teaspoon salt
    • 1 teaspoon vanilla essence
    • 8 whites of eggs (room temperature)

    Method

    1. Heat Oven to 180 c electric, gas mark 4
    2. separate 8 yolks from the whites,(you only need the whites of the eggs)
    3. Whisk the eggs until nice and frothy
    4. Then add your vanilla essence/salt and also your caster sugar, until nice and stiff
    5. Next add the plain flour and Icing sugar and do the same again until you form some nice stiff peaks
    6. Spoon into your cake tin and place on a middle shelf for 35 minutes
    7. You then turn it upside down onto a up turned mug for 2 hours
    8. After this, slide your knife around the edges and turn out
    9. Eat with fruit, ice-cream, fresh cream etc

    Tip

    YOU MUST TURN IT UPSIDE DOWN UNTIL IT HAS COOLED OR ELSE IT WILL BEGIN TO GO FLAT
