Healthy high protein oat cake bars

    As part of my lifestyle and diet change, I wanted some snacks that are nutritious and full of protein. Each bar is around 165kCal and has ~9g of protein. This is a good snack if you are on a fat loss programme. You may substitute the seeds and nuts appropriately.

    Makes: 24 slices

    • 420g rolled oats
    • 150g whey protein powder (vanilla flavour preferred)
    • 40g sunflower seeds
    • 40g pumpkin seeds
    • 80g sultanas
    • 40g cashew nuts
    • 600ml semi-skimmed milk
    • 75g extra virgin coconut oil

    1. Preheat the oven to 180 C / 160 C fan / Gas 4. Line a 20x30cm baking tray with baking parchment.
    2. Mix oats, protein powder, seeds, sultanas and nuts together.
    3. Warm up the milk in a microwave and mix the coconut oil in to it to melt. Mix the warm milk with the dry ingredients; it will come to a slightly runny consistency. Spoon the mixture into the prepared baking tray and press to compact with the back of a spoon.
    4. Bake in the preheated oven for 15 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before cutting into 24 slices.
