About this recipe: This recipe can be altered to take part cooked apple pieces for apple cake, change type of sugar for richer dark cake and adding dried fruit.

Serves: 8 

  • 170g (6 oz) sugar
  • 170g (6 oz) soft margarine
  • 3 eggs
  • 280g (10 oz) self raising flour

  1. Preheat the oven to 140 C / Gas 1. Grease an 18cm (7 in) cake tin and line with baking parchment.
  2. In a bowl, cream together the sugar and margarine. Add eggs and mix in. Fold in flour, and any fruit, spice or any grated carrot that you would like. Spoon into the prepared cake tin.
  3. Bake in the preheated oven for 1 hour, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before slicing and serving.


Obviously by adding fruit or other ingredients the coking times will vary, also the type of oven. Have fun and experiment.
