    About this recipe: Heart health and protein in a bowl! This salad bowl is packed with flavour. It has hard-boiled egg, red quinoa, avocado and feta cheese! Very easy to make and is delicious for lunch, breakfast or brunch.

    Ingredients
    Serves: 2 

    • 120ml water
    • 60g red quinoa
    • 1 1/2 teaspoons olive oil
    • 2 eggs
    • 1 pinch salt and ground black pepper to taste
    • 1/4 teaspoon freshly ground black pepper
    • herbal salt, to taste
    • 1 avocado, diced
    • 20g feta cheese, crumbled

    Method

    1. Stir water and quinoa together in a saucepan or rice cooker; cook until quinoa is tender, about 15 minutes.
    2. Heat olive oil in a pan over medium heat and cook eggs to desired doneness; season with salt and pepper. Boil eggs if preferred.
    3. Combine quinoa and eggs in a bowl; top with avocado and feta cheese.
