Spicy Mexican quinoa salad

    A deliciously fresh quinoa salad made with black beans, peppers and corn. The spicy jalapeno-lime dressing kicks the heat up a notch!

    Serves: 4 

    • Salad
    • 1 (400g) tin black beans, drained and rinsed
    • 280g cooked quinoa
    • 165g frozen corn
    • 1 red pepper, diced
    • 50g chopped spring onion
    • 25g finely chopped coriander, plus more for garnish
    • 1 teaspoon minced garlic
    • Dressing
    • 120ml olive oil
    • 1 lime, juiced
    • 2 tablespoons honey
    • 6 pickled jalapeno pepper slices, chopped
    • 1/4 teaspoon dry mustard
    • 1/4 teaspoon paprika

    1. Stir black beans, quinoa, corn, red pepper, spring onion, coriander and garlic together in a large bowl.
    2. Whisk olive oil, lime juice, honey, jalapeno, mustard and paprika together in a bowl until dressing is smooth and creamy. Pour dressing over quinoa mixture and toss to coat. Garnish with fresh coriander.

    Beautiful color and flavorul. The ratio of quinoa to dressing was off. I added almost another cup of Quinoa to balance the amount of dressing. Next time I would just add half the dressing to flavor.  -  14 Mar 2017  (Review from Allrecipes US | Canada)
