Goat's cheese cloud bread

I wanted to replace cow's milk cream cheese in my cloud bread recipe with soft goat's cheese. They turned out great - goat cheese adds a bit more flavour and adds a touch of salt. Add some fresh herbs or spices to the mixture before baking it if you like.

Makes: 6 cloud breads
- 2 tablespoons creamy goat's cheese
- 2 eggs, separated
- 1/4 teaspoon baking powder

- Preheat oven to 150 C / Gas 2. Line a baking tray with baking paper.
Mix goat's cheese and egg yolks together until smooth.
Place egg whites and baking powder in a glass, metal or ceramic bowl; beat together until stiff peaks form.
Fold goat cheese and egg yolk mixture gently into egg whites until just combined and light yellow in colour.
Spoon the batter onto the prepared baking tray in mounds about 10cm in diameter, flattening peaks with the back of the spoon.
Bake in the preheated oven until golden brown, 17 to 20 minutes.
