Ginger and cinnamon cod with salad

    This is a lovely healthy dish for all fish lovers! Can serve has many people as you like depending on how many pieces of cod you buy, I'll base this recipe on 2 people.

    Serves: 2 

    • 1/2 head lettuce, shredded
    • 6 to 8 radishes, halved and sliced
    • 3 medium tomatoes, sliced
    • 5 to 6 mushrooms, sliced
    • 2 large pieces cod (smoked or unsmoked)
    • 2 level tablespoons butter, melted
    • 3 tablespoons ground ginger
    • 3 tablespoons ground cinnamon
    • soya sauce, to taste (optional)

    1. Preheat the oven to 200 C / Gas 6.
    2. Combine the lettuce, radishes, tomatoes and mushrooms in a bowl and lightly toss, cover in film and place in the fridge.
    3. Take your two pieces of cod and then melt your butter, add a tad of melted butter over the cod then slightly coat them first in the ginger (best to sprinkle over and not roll them in it) then do the same with the cinnamon.
    4. Once you have coated your cod place both pieces on a baking tray and cover with tin foil.
    5. Bake in the preheated oven on the middle shelf for 20 to 25 minutes, until the fish flakes easily with a fork and is evenly white throughout.
    6. Take your cod out of the oven leave to stand for a few minuets and then place them onto plates, take your salad from the fridge and portion out your desired amounts, you can add soya sauce as a salad dressing if you like but it is optional and you can use a different dressing if you'd like to. Eat and enjoy!!


    You don't have to have salad with this and you can choice any side you'd like to. I find salad is best if you are wanting a light meal.
