About this recipe: Just take a slice when you feel like a special treat. This lemon ice cream is ideal for serving as a dessert on warm summer days.

Serves: 4 

  • 300ml whipping cream
  • 4 lemons
  • 1 tin condensed milk
  • 200g amaretti biscuits, crushed

  1. Line a loaf tin with foil. Whip the double cream in a mixing bowl until stiff peaks form. Take the juice of 4 lemons and zest of 2 then add to the cream along with the condensed milk.
  2. Put 1/3 of the crumbs in the tin and add 1/3 of the mixture on top and freeze for 10 minutes. Repeat for a second time. Repeat for one last time, then cover and freeze overnight or until needed. Turn out and enjoy.
