Very easy cupcake recipe

    This is a very simple recipe for beginner bakers. Once cooled decorate as desired with your favourite icing or buttercream.

    Makes: 18 cupcakes

    • 200g self-raising flour
    • 200g caster sugar
    • 200g margarine or unsalted butter
    • 4 eggs
    • 2 tablespoons vanilla extract

    1. Preheat the oven to 200 C / Gas 6. Line two 12 hole muffin tins with paper cases.
    2. In a mixing bowl beat together the butter and sugar until fluffy, then add the eggs, one at a time and beat until creamy. Add the vanilla extract then fold in the flour until well incorporated. Spoon the mixture into the prepared paper cases filling only 3/4 full to ensure a good rise.
    3. Bake in the preheated oven to 10 minutes, until a skewer inserted into the centre comes out clean. Once baked, remove from the oven, let cool then decorate. Enjoy!!
