Edamame roasted garlic hummus

    Roasted garlic flavours this bright green edamame bean hummus that's flavoured with lemon juice and fresh coriander. Serve with pitta or tortilla chips.

    Serves: 8 

    • 1 bulb garlic
    • 2 tablespoons olive oil, divided, or more as needed
    • 500g edamame
    • 25g fresh coriander, roughly chopped
    • 80g tahini
    • 60ml lemon juice
    • 1 teaspoon salt
    • 1 teaspoon smoked paprika

    1. Preheat oven to 180 C / Gas 4.
    2. Trim about 1/2cm off the top of the garlic bulb, to expose the cloves; drizzle with 1 tablespoon olive oil and wrap in foil.
    3. Bake in the preheated oven until soft, about 1 hour. Let cool until easily handled, about 10 minutes.
    4. Squeeze roasted garlic cloves into a food processor. Add 1 tablespoon olive oil, edamame, fresh coriander, tahini, lemon juice and salt. Process until smooth, adding more oil if needed, about 3 minutes. Transfer to a serving dish and sprinkle with smoked paprika.

    I soaked the edamame beans in water overnight, boiled them for 5 mins and kept the juice aside. When they were cooled, I took the skins off, added all the ingredients listed except the cilantro and added a few tablespoons of the boiling juice of the beans. ( I guess that's why the color changed) I used sea salt for taste. Really yummy! We are planning on eating them with wasabi chips.  -  29 Nov 2016  (Review from Allrecipes US | Canada)
