This is one of my own creations as I like to cook fairly simple dishes, especially for blokes and those living alone. This is an easy-to-cook soup, hearty, warming and flavoursome, ideal for lunch for four (or two if you like a second bowl!) with just a hint of heat from the spice. My usual tack is to rummage in the kitchen until I find what ingredients I have then get creative. This dish turned out to have a smooth creamy texture.
You can garnish the soup once in the bowl with almost anything you like but you won't have the time as you'll be very keen to get stuck in!
I scaled everything up to make 8 litres for work lunches. 9 leeks, 3 onions, 2.5 kilo of potatoes, half a pack of butter, 4 chillies and 5 stock cubes. Blended with a stick blender. Absolutely stunning! - 19 Apr 2017
