Batata chtitha (Algerian potatoes in red sauce)

    Serves: 6 

    • 1kg potatoes, peeled and cubed
    • 6 cloves garlic, minced
    • 2 chilli peppers, seeded, crushed using a pestle or finely chopped
    • 1 teaspoon black pepper
    • 1 teaspoon paprika
    • salt
    • 4 tablespoons oil
    • 1 tablespoon tomato puree

    1. Place the potatoes in a bowl with cold water.
    2. Add garlic, chillies, spices, salt, and oil in a cooking pot. Stir over low heat till fragrant.
    3. Dilute the tomato puree in a little water and add to the pot.
    4. Drain the potatoes and add to the pot. Cover with water and bring to the boil, then reduce heat and simmer till potatoes are cooked through, about 20 minutes.
