Sugo di pomodoro (Italian tomato sauce)

About this recipe: Simply authentic Italian tomato sauce flavoured with extra virgin olive oil, garlic and basil. Toss with your favourite pasta or use for pizza, gnocchi and more.


Serves: 4 

  • 2 tablespoons extra virgin olive oil
  • 1 onion or 2 shallots, finely chopped
  • 4 cloves garlic, halved or finely chopped
  • 800g passata
  • fresh basil leaves
  • salt to taste

  1. Heat oil in a saucepan or casserole over low heat. Add onion or shallot and garlic and cook and stir till translucent.
  2. Pour in passata and add basil and salt. Cover and simmer for 20 minutes over medium heat, stirring occasionally.
  3. If you've left the garlic cloves halved, remove garlic before serving. Add more basil just before serving, if liked.
