Chorba frik (Algerian freekeh soup, meatless version)

    This is a vegetarian version of the the famous Algerian soup chorba frik with freaked (roasted green wheat).

    Serves: 8 

    • 1 onion, peeled and cubed
    • 1 large potato, peeled and cubed
    • 2 carrots, peeled and cubed
    • 2 courgettes, cubed
    • 2 tablespoons vegetable oil
    • 425g passata
    • 1 teaspoon paprika
    • ½ teaspoon black pepper
    • ½ teaspoon ground cinnamon
    • 1 teaspoon ground cumin
    • ½ teaspoon ground turmeric
    • 1 bunch fresh coriander, minced
    • 10 mint leaves, minced
    • ½ bunch fresh parsley, minced
    • 400g cooked or tinned chickpeas, drained
    • 4 stalks celery, halved and tied together
    • 2 tablespoons tomato puree
    • 250g freekeh (roasted green wheat)
    • salt
    • 1L water, more as needed

    1. Place the onion, potato, carrots, courgettes in the bowl of a food processor and process till chopped. Do not puree the vegetables, they should be chopped as if they were hand grated.
    2. Pour the oil in a large pot, and then add the vegetables and the passata. Sprinkle with paprika, pepper, cinnamon, cumin and turmeric, mix well, then add the coriander, mint and parsley. Place the celery on top, cover with water and simmer for 1 hour.
    3. Add the tomato puree, chickpeas and freaked. Add water if necessary and cook a few more minutes until the freekeh is tender.
    4. Remove the celery (it can be reused in another vegetables soup). Season to taste and serve hot.
