Cheesy bubble and squeak cakes

    Super delicious and greet for a hangover plus a great way to use up leftover mash potatoes.

    Serves: 4 

    • 1 pan leftover mashed potatoes (about 500g)
    • 200g grated cheese (use a variety for great flavour )
    • 1 onion or 5 spring onions, chopped
    • 1 pepper, chopped
    • 30g butter
    • salt and pepper

    1. Combine the mash, onion, pepper, salt and pepper. Mix well and form mixture into cakes.
    2. Melt the butter in a frying pan over medium heat. Once hot, add the cakes and pan fry till browned on one side, then turn over. Top with cheese and cook till cheese is melted and bottoms are browned.
