    About this recipe: This is a simple mixture of papaya, strawberry, yoghurt and a touch of demerara sugar. The difference however is that in a sunripe smoothie, you use a tree ripened papaya, and leave it in the kitchen till it starts to go mouldy on the outside! Boom - you now have the juiciest papaya in England.

    Ingredients
    Serves: 2 

    • 1 very ripe papaya
    • 5 strawberries
    • 3 tablespoons plain yoghurt, plus extra
    • 3 teaspoons demerara sugar
    • mint leaf to garnish

    1. Skin the papaya and chop in half. The fruit should look very juicy! Remove seeds and add fruit to a blender along with the strawberries. Blitz on a low speed, then add the 3 tablespoons yoghurt and the sugar. Process on high till smooth, then pour into a pint glass and garnish with a little extra yoghurt and a mint leaf.

    Tip

    Let the papaya ripen at room temperature for several days after you buy it. That's the key to a juicy, tasty papaya!
