Skin the papaya and chop in half. The fruit should look very juicy! Remove seeds and add fruit to a blender along with the strawberries. Blitz on a low speed, then add the 3 tablespoons yoghurt and the sugar. Process on high till smooth, then pour into a pint glass and garnish with a little extra yoghurt and a mint leaf.
Let the papaya ripen at room temperature for several days after you buy it. That's the key to a juicy, tasty papaya!
