About this recipe: These sweet and creamy ice pops are made with avocado, lime juice and sugar syrup! Add fresh mint if you like!


Makes: 10 ice pops

  • 475ml water
  • 200g caster sugar
  • 2 avocados, peeled, pitted and cubed
  • 120ml lime juice
  • 10g freshly chopped mint (optional)

  1. Bring water to the boil in a saucepan. Stir sugar into boiling water until dissolved. Remove from heat and allow to cool.
  2. Mash avocados with lime juice and sugar-water in a bowl until smooth. Stir mint through the avocado mixture. Pour into ice pop moulds.
  3. Store in freezer until frozen solid, at least 3 hours.
