Avocado ice pops

    These sweet and creamy ice pops are made with avocado, lime juice and sugar syrup! Add fresh mint if you like!

    Ingredients
    Makes: 10 ice pops

    • 475ml water
    • 200g caster sugar
    • 2 avocados, peeled, pitted and cubed
    • 120ml lime juice
    • 10g freshly chopped mint (optional)

    Method
    Prep:25min  ›  Extra time:3hr freezing  ›  Ready in:3hr25min 

    1. Bring water to the boil in a saucepan. Stir sugar into boiling water until dissolved. Remove from heat and allow to cool.
    2. Mash avocados with lime juice and sugar-water in a bowl until smooth. Stir mint through the avocado mixture. Pour into ice pop moulds.
    3. Store in freezer until frozen solid, at least 3 hours.

    Really good. Agree with other reviewers that the mint is what makes it. Only issue was sticking in the popsicle mold, but I have no idea if that reflects on the recipe or my molds. Very, very good!  -  02 Jul 2017  (Review from Allrecipes US | Canada)
