    You could be eating warm rhubarb cake with vanilla ice cream in 10 minutes or less with this quick and easy recipe for a single-serving microwave mug cake.

    Serves: 1 

    • 1 egg
    • 2 tablespoons plain flour
    • 2 teaspoons sugar, or to taste
    • 1 1/2 teaspoons milk
    • 1 teaspoon finely chopped rhubarb, or to taste
    • 1/3 teaspoon cinnamon, or to taste

    Prep:5min  ›  Cook:3min  ›  Ready in:8min 

    1. Mix egg, flour, sugar, milk, rhubarb and cinnamon together in a large microwave-safe mug.
    2. Cook on high until cake rises above the top of the mug, about 3 minutes. Let cool for 1 minute before serving.

    Easy recipe to throw together in a pinch. I used more rhubarb than indicated and more cinnamon, simply because I like both. As expected, a microwave cake is a little more chewy than an oven baked cake but,hey, I wanted something sweet, fast and without fuss. That's what I got!     The cake rose beautifully in the microwave, but deflated very quickly making a tough, chewy cake. This could be because my microwave runs higher than the submitter’s, or because it lacks a leavening agent. The flavor was good though and worth adjusting for future bakes.
