Delicious lemon ice cream

    You will love this ice cream. just a light lemon flavour with no eggs and no ice cream maker required. It is lovely, even my siblings love it.

    Serves: 4 

    • zest and juice of 1 large lemon
    • 200g caster sugar
    • 250ml cold milk
    • 250ml cold double cream

    1. Combine the lemon zest and sugar in the container of food processor. Process until the zest is fine.
    2. In a medium bowl, stir together the sugar mixture and milk until sugar has dissolved, then stir lemon juice. In a separate bowl, whip the double cream until stiff but not grainy. Gently fold the whipped cream into the lemon mixture until blended.
    3. Pour the mixture into a bowl or container, then cover with cling film or a lid. Freeze it for at least 3 hours.
