American oatmeal cookies

    I got this recipe from an American neighbour and I've been making them ever since. Really versatile, you can add nuts, raisins, glace cherries, dried apricots, dried mango or pineapple, chocolate chips, cinnamon and apple or anything else you can think of!

    Makes: 2 to 3 dozen

    • 220g (1 3/4 c) self-raising flour
    • 250g (1 1/4 c) caster sugar
    • 6 tablespoons dark brown soft sugar
    • 2 eggs (3 if they are small)
    • 1 teaspoon vanilla extract
    • 110g (1/2 c) melted unsalted butter
    • 300g (2 c) oatmeal

    1. Preheat oven to 190 C / Gas 5.
    2. Sift the flour. Mix in caster sugar and brown sugar.
    3. Mix eggs and vanilla. Add melted butter.
    4. Add wet ingredients to the flour. Mix well. Add oatmeal.
    5. Drop by 1/2 teaspoonfuls onto a baking sheet and flatten a little. Place cookies wide apart as they expand a lot when baking.
    6. Bake between 8 to 12 minutes or until light brown. Let rest for 2 minutes. Cool on rack.


    Mix in other desired ingredients before adding the oatmeal.
    You can use only 200g (1 cup) sugar if you don't like them too sweet.
