Serves: 4

  • 4 Smoked Mackerel Fillets
  • 20-40 small baby potatoes
  • 1 red onion, sliced
  • 600ml double cream
  • 2 tablespoons wholegrain mustard
  • 300ml milk
  • Cheese for grating

Method
Prep:20min  ›  Cook:40min  ›  Ready in:1hr

  1. Boil the potatoes in their skins for 10 minutes then allow to cool. Slice the potatoes into 4mm slices.
  2. Flake the fish fillets into a bowl (not too fine). Add the potatoes and onion to the fish and mix thoroughly. Place into a baking dish.
  3. Combine the cream, milk and mustard and mix. Pour over the fish mixture. Grate cheese over the dish and place into an oven 200 C / Gas 6 for 40 minutes. Eat with a green salad and some bread to mop up the sauce. Enjoy!

Love it Love it! I really could eat this everyday, although I did replace the double cream with reduced fat creme fraise, cause us girls are always watching what we eat!!! Whole family loved it, thank you. - 19 May 2012
