Roast Algerian potatoes

    I’m particularly fond of these roast potatoes called 'Batata fel four'. It reminds me of my childhood in Algeria. My mother used to prepare two large roasted chickens that she accompanied with a large tray of roast potatoes.

    Serves: 6 

    • 1 onion, coarsely chopped or diced
    • 3 cloves garlic, mashed
    • 1 tablespoon prepared mustard
    • 5 tablespoons olive oil
    • 1 teaspoon black pepper
    • 1 tablespoon salt
    • 2 tablespoons balsamic vinegar
    • 250ml water
    • 1kg potatoes

    1. Preheat your oven to 190 C / Gas 5.
    2. In a baking dish, combine the onion, garlic, mustard, oil, pepper, salt, vinegar and water.
    3. Wash, peel, and cube the potatoes.
    4. Add the potatoes to the seasoning mix and bake until nicely golden, about 45 minutes.


    You can leave the potatoes unpeeled, just make sure you wash them well before cutting.
