Oat blondies

    These are wonderful, chewy blondies are made with oats. Add your favourite nuts, raisins, coconut flakes or chocolate chips to the mix if you like.

    Makes: 12 blondies

    • 225g butter, at room temperature
    • 225g light brown sugar
    • 100g caster sugar
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 1/2 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 100g plain flour
    • 160g porridge oats
    • chopped walnuts (optional)
    • raisins (optional)
    • chocolate chips (optional)

    1. Preheat oven to 180 C / Gas 4. Grease and flour a rectangular baking tin.
    2. In a large bowl, beat the butter, brown sugar and caster sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, bicarbonate of soda, baking powder, flour, oats, plus chocolate chips, raisins and chopped nuts if desired. Mix well to moisten all ingredients and spread into the prepared baking tin.
    3. Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the tin for about 5 minutes before cutting into bars.

    Even though in the recipe I say to add your choice of ingredients... (choc chips, nuts, raisins, toffee bits, etc.) the truth is that I personally prefer them with NOTHING. I love to eat them in the morning with a nice cup of creamy latte or cappuccino. That way I can enjoy the flavor of the oatmeal....     So good it makes you want to say it with your mouth full! I halved the recipe, used an 8X8 pan, added some pecans and some milk chocolate chips. I didn't over do it though because I really wanted to taste the oatmeal in them, which I love. I predict my husband and I will *magically* make them dissapear in the next two hours.
