A refreshing quinoa and vegetable salad that you can serve as part of a vegan meal or with grilled fish.

1 red onion, minced
1 bunch fresh coriander, minced
1 cucumber, diced
1 mango, peeled, stone removed and diced
1 avocado, peeled, stone removed and diced
3 limes, juiced
salt and pepper
zaatar or other spice mix of your taste

Rinse quinoa under cold water and drain. Place in a saucepan with about double the amount of water. Bring to the boil, then reduce heat and simmer, covered, for 15 minutes, do no open the pan during that time. Remove from the hob and let stand for 5 minutes, then remove the lid and fluff with a fork. Tip into a salad bowl and let cool.
While the quinoa is cooking prepare the veg and fruit. To prevent the avocado from browning, drizzle it generously with lime juice as soon as you cut it.
Add the rest of the lemon juice to the salad bowl together with the fruit and veg and a drizzle of olive oil. Add salt and pepper to taste and season with zaatar or another spice mix of your choice. Serve chilled or at room temperature.
