Cashew quinoa granola

    Deliciously nutty, pleasingly crunchy and protein-packed. Cashew quinoa granola is grain free, sugar free and gluten free - a real feel-good breakfast!

    Serves: 10 

    • 100g uncooked, washed quinoa
    • 100g unsalted cashew nuts
    • 50g walnut pieces
    • 50g sliced almonds
    • 50g coconut flakes
    • 50g cashew butter
    • 50g sunflower seeds (optional)
    • 50g pumpkin seeds (optional)
    • 1 teaspoon mixed spice or ground cinnamon

    1. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Combine all ingredients in a mixing bowl and stir well, ensuring the cashew butter is well distributed. Spread evenly on baking tray.
    3. Bake in the preheated oven for about 15 minutes, keeping a close eye and turning regularly so it does not burn.
    4. Once cool, store in an airtight container for up to 2 weeks.
