Using a rolling pin, crush the cream crackers into fine crumbs.
Heat a drizzle of oil in a small frying pan. Fry the onion, crackers, herbs, salt and pepper in a small frying pan for about 4 minutes.
Into a medium bowl, crack the egg and add the tuna. Mix together, and add in the mixture from the frying pan. Add in a sprinkle of flour and shape into patties using your hands. To help them keep their shape while cooking, place them in your fridge for at least 20 minutes.
Heat a small amount of oil in a frying pan over medium heat. Add in the patties and cook for 3 to 4 minutes on each side. Plate up and enjoy!
