    About this recipe: Make cauliflower 'rice' by grating or pulsing a whole head of cauliflower in a food processor. It's delicious in a frittata for a low carb meal that's ready in under 30 minutes.

    Serves: 4 

    • 1 large head cauliflower, broken into large pieces
    • 2 tablespoons avocado oil
    • 1 pinch garlic salt, or more to taste
    • 475ml egg whites
    • 4 eggs
    • 1 pinch garlic powder, or more to taste
    • 1 pinch freshly ground black pepper, or more to taste
    • 1 pinch dried chilli flakes, or more to taste

    1. Run cauliflower through the food processor using the shredding blade or pulse to create cauliflower 'rice'.
    2. Preheat your oven grill.
    3. Heat avocado oil in an oven-safe pan over medium-high heat. Add cauliflower 'rice' and garlic salt; cook and stir until tender, 3 to 4 minutes.
    4. Whisk egg whites, eggs, garlic powder, black pepper and salt together in a bowl; pour over cauliflower mixture. Cook until eggs are mostly set, 5 to 7 minutes.
    5. Place pan under the grill until eggs are completely set, 5 to 7 minutes. Cool 5 minutes before serving.
