Salmon Crunch

    An easy and tasty lunch or supper dish, which is lovely with a crisp salad.

    • 3oz butter (or 1oz if using crisps)
    • 1oz flour
    • 1tsp dry mustard
    • 180z can of salmon
    • 2tblpsns lemon juice
    • 1 x 8oz can of red salmon
    • 2/3 sticks finely chopped celery
    • 4oz breadcrumbs or 1 small pkt plain crushed crisps
    • salt and pepper to taste
    • i large can Carnation evaporated milk


    1. Make a roux with butter 1oz butter and flour and mustard powder, add evaporated milk and lemon juice. Add flaked salmon and celery. Mix together well and put in ovenproof dish. If using crisps crush the packet and add them to the top. If using breadcrumbs melt 2oz butter to 4oz of breadcrumbs, mix together well and add to the top. 30 mins in oven at 180degrees'


    This can be made in advance, even the day before, if kept in the fridge. For larger quantities simply double the amounts. Our family prefer crisps as the topping but that is purely a personal taste
