Make a roux with butter 1oz butter and flour and mustard powder, add evaporated milk and lemon juice. Add flaked salmon and celery. Mix together well and put in ovenproof dish. If using crisps crush the packet and add them to the top. If using breadcrumbs melt 2oz butter to 4oz of breadcrumbs, mix together well and add to the top. 30 mins in oven at 180degrees'
This can be made in advance, even the day before, if kept in the fridge. For larger quantities simply double the amounts. Our family prefer crisps as the topping but that is purely a personal taste
