These are small dairy free Algerian biscuits that melt in the mouth. I like preparing mine with walnuts, but you can also make them with half walnuts and half almonds.

Ingredients
Serves: 10
500g walnuts, ground
150g icing sugar
2 packs vanilla sugar
2 teaspoons baking powder
1 tablespoon vanilla extract
3 eggs
1 egg yolk
For the icing
3 egg whites
1 pinch salt
500g icing sugar
a few drops yellow or orange food dye
walnut halves to decorate

Preheat your oven to 180 C / Gas 4. Line a baking tray with greaseproof paper.
In a large bowl, combine the walnuts with the icing sugar, the baking powder, and vanilla sugar. Gradually add the vanilla extract, whole eggs and egg yolks and stir until it all holds together as a ball.
Roll out the mixture with a rolling pin about 2cm thick. Cut out triangles or rounds and place them on the baking tray.
Bake till lightly coloured, about 12 minutes.
To mix the icing, place the egg whites with a pinch of salt in a bowl and whisk until firm. Stir in the icing sugar and yellow (or orange) dye. The icing should have a thick consistency.
Brush the top and sides of the biscuits with icing and decorate with walnut halves. Let dry for 1 hour.
