Fruit 'n' nut refrigerator fingers

    Everyone will love this tasty recipe! A luxurious variety of dried fruit, walnuts and crushed digestives are combined with chocolate and chilled till set.

    • 14 pink and white marshmallows
    • 75g (3 oz) luxury dried mixed fruit
    • 25g (1 oz) candied orange peel, chopped
    • 75g (3 oz) glace cherries, quartered
    • 75g (3 oz) walnuts, chopped
    • 175g (6 oz) digestive biscuits, broken into pieces
    • 225g (8 oz) plain dark chocolate
    • 125g (4 oz) unsalted butter
    • 1 tablespoon icing sugar, for dusting (optional)

    1. Lightly oil and line the base of a 18cm (7 in) tin with baking parchment.
    2. Using oiled kitchen scissors, snip each marshmallow into 4 or 5 pieces over a bowl.
    3. Add the dried mixed fruit, orange peel, cherries and walnuts to the bowl and stir together. Add the biscuits and stir until mixed.
    4. Break the chocolate into squares and put in a heatproof bowl with the butter set over a saucepan of almost boiling water. Stir occasionally until melted, then remove from the heat.
    5. Pour the melted chocolate mixture over the dry ingredients and mix together well. Spoon into the prepared tin, pressing down firmly.
    6. Chill in the fridge for 15 minutes, then mark into 12 fingers using a sharp knife. Chill for a further 1 hour until set.
    7. Turn out of the tin, remove the parchment and cut into fingers. Dust with icing sugar before serving, if liked.
