Slow cooker chicken and salsa

    This is such an easy slow cooker recipe with just 3 ingredients. The chicken comes out moist and sweet. You can use use chicken thighs and drumsticks if you prefer. It's perfect for using in tacos as the chicken will pull apart with a fork.

    Serves: 6 

    • 1 onion, sliced and separated into rings
    • 1 (2.25kg) whole chicken
    • 500g salsa, fresh or jarred

    Prep:5min  ›  Cook:5hr  ›  Extra time:10min resting  ›  Ready in:5hr15min 

    1. Spread onion rings into the bottom of a slow cooker. Place chicken onto onion layer with breast-side facing down. Pour salsa over the chicken.
    2. Cook on High until no longer pink at the bone and the juices run clear, about 5 hours.
    3. Remove the chicken from slow cooker, cover with a doubled sheet of foil; allow to rest for 10 minutes before slicing.

    I do this with chicken breast. And found deli salsa to work amazingly well. Although I bet this version is good too, I don't like to deal with the bones. I skip the onion, cook a few hours and shred. I freeze in portions to use in tacos, enchiladas, burritos, nachos... Whatever. The juice makes a great base for chicken tortilla soup!     I make this frequently. You can do so many variations depending on what you have at home. My favorite... Add a can of crushed pineapple and a can of rinsed black beans. And I don't usually add the onion and DO use boneless breasts. Easy peasy and delish!
