About this recipe: This is such an easy slow cooker recipe with just 3 ingredients. The chicken comes out moist and sweet. You can use use chicken thighs and drumsticks if you prefer. It's perfect for using in tacos as the chicken will pull apart with a fork.


Serves: 6 

  • 1 onion, sliced and separated into rings
  • 1 (2.25kg) whole chicken
  • 500g salsa, fresh or jarred

Prep:5min  ›  Cook:5hr  ›  Extra time:10min resting  ›  Ready in:5hr15min 

  1. Spread onion rings into the bottom of a slow cooker. Place chicken onto onion layer with breast-side facing down. Pour salsa over the chicken.
  2. Cook on High until no longer pink at the bone and the juices run clear, about 5 hours.
  3. Remove the chicken from slow cooker, cover with a doubled sheet of foil; allow to rest for 10 minutes before slicing.
