Mexican strawberry water (Agua fresca de fresa)

    This drink made with fresh strawberries and mint is a popular all over Mexico. It's a lovely refreshing and flavourful way to cool down!

    Ingredients
    Serves: 10 

    • 600g fresh strawberries
    • 200g sugar, or to taste
    • 2 litres cold water
    • 1 lime, cut into 8 wedges
    • 8 sprigs fresh mint

    Method

    1. In a medium bowl, mix together sliced strawberries, sugar and 250ml of water. Cover the bowl with cling film and place in the fridge for 4 hours.
    2. Remove the strawberry mixture from the fridge and pour into a blender. Blend on high until smooth. Pour the blended berry mixture through a sieve set over a large mixing bowl; discard the pulp and seeds.
    3. Add the remaining cold water to the pureed strawberries and mix well. Place the strawberry water in the fridge to chill for several hours or pour over ice and serve immediately. Garnish with lime slices or mint leaves.

    I'm Mexican and I grew up drinking this delicious aguas frescas.My whole fam. loved this drink, definately we'll make it again during the summer. The possibilitys are endless instead of strawberries you can use cantaloupe,watermelon, papayas etc,. even mangos. Yummy! My only changes: Didn't have time to put it in the refrigerator and wait 4 hrs. so I just put it in the blender and made it in two batches, used Splenda insted of reg. sugar and didn't strained like the recipe states.But I'm sure the original recipe is as delicious with no changes.
