Super tasty potato salad

    Easy, economical, made in minutes and very tasty! This recipe uses tinned new potatoes so there is no cooking required. It makes enough for six servings.

    Serves: 6 

    • 2 (800g) tins new potatoes, drained and thickly sliced
    • 1 bunch spring onions, trimmed, sliced into 1cm pieces
    • 1/2 a shallot, minced
    • 2 tablespoons white wine vinegar
    • 240g mayonnaise
    • 1/4 teaspoon black pepper, salt and celery salt
    • 1/4 teaspoon salt
    • 1/4 teaspoon celery salt
    • 1/2 teaspoon dried dill
    • 1 tablespoon Djon mustard

    1. Mix sliced potatoes, chopped spring onions and minced shallot in a large bowl. Add 2 tablespoons white wine vinegar; toss to coat.
    2. In a separate bowl; mix mayonnaise with black pepper, salt, celery salt, dried dill and Dijon mustard until thoroughly combined.
    3. Combine the potato mixture and mayonnaise; cover and cool in fridge - all done until you are ready to serve!
