    About this recipe: Easy, economical, made in minutes and very tasty! Best results when made a day in advance to allow flavours to develop. It freezes very well.

    Makes: 400 g

    • 1 shallot, finely chopped
    • 1 clove garlic, finely chopped
    • 1 (400g) tin chopped tomatoes
    • 1 tablespoon Worcester sauce
    • 1/2 tablespoon Tabasco® sauce
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon tomato puree
    • 1/8 teaspoon cayenne pepper
    • 2 teaspoons dark brown sugar
    • 1 teaspoon dried oregano
    • 1 teaspoon dried marjoram
    • 1 teaspoon dried chilli flakes
    • 2 teaspoons dried basil
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon sea salt

    1. Mix all the ingredients in a saucepan over medium -low heat; bring to the boil, reduce heat and simmer the sauce for 30 minutes, stirring now and then.
    2. Allow the sauce to cool before transferring to a bowl or dish. Cover and keep store in fridge.
