Penne with vodka and bacon

    The popular penne with vodka in a variation with bacon.

    Serves: 4 

    • 250g penne or other small pasta
    • 1 tablespoon olive oil
    • 200g streaky bacon strips
    • 1 onion, minced
    • 100ml passata
    • 80ml vodka
    • 120ml single cream
    • salt and pepper
    • 60g grated cheese
    • a few parsley sprigs, mined (optional)

    1. Bring a large pot of water to the boil and cook the pasta following the package instructions. Drain.
    2. In a frying pan heat oil and fry bacon till crispy and browned. Add onion and fry till translucent, about 3 minutes. Add the passata and simmer for a further 3 to 4 minutes whist stirring often.
    3. Deglaze the pan with vodka and stir will to loosen the bits stuck to the bottom of pan. Add cream, salt and pepper. Stir well and simmer for a further 2 to 3 minutes.
    4. Add the drained penne to the saucepan and reheat thoroughly without boiling. Sprinkle with cheese and parsley and serve.
