Blue cheese chicken

    This is a nice simple dish using leftover chicken and blue cheese that you will love. You can add different things like bacon instead of chicken or rice instead of pasta.

    Serves: 4 

    • 350g pasta of your choice
    • 500ml double cream
    • blue cheese, as needed
    • 1 onion, thinly sliced
    • 200g left over chicken or cooked chicken of your choice

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook until al dente, 8 to 10 minutes.
    2. Warm cream in a pot over low heat until heated through. Add blue cheese, bit by bit, until it reaches the flavour you like. Stir sauce until it has thickened slightly.
    3. Stir onions and cooked chopped chicken into the sauce until well coated.
    4. Drain pasta; arrange on plates and top with creamy blue cheese and chicken sauce.
