Dissolve yeast in warm water. Let it stand until creamy, around 10 minutes. Add oil, vinegar, egg and egg white.
Place gluten free flour mix with xanthan gum in a stand mixer bowl. With the paddle attachment, mix on low speed, gradually adding wet ingredients. Once completely added, increase speed to medium and mix till smooth.
Grease a 900g loaf tin (about 21x11cm), or use a non-stick tin. Pour mixture in tin, and smooth the top with a spatula. Cover with a towel and let rise for 1 hour in a warm area (rising time will vary depending on altitude, temperature and humidity).
Preheat oven to 190 C / Gas 5.
Bake bread in preheated oven in the middle rack for 45 minutes. Once baked, remove loaf from tin, cover with a towel and let cool before slicing.
