Spinach and orzo soup

    Baby spinach leaves, orzo pasta, chicken stock, scallions and carrots are all you need to make this flavourful soup. Ready in less than 30 minutes. Top with freshly grated Parmesan cheese.

    Serves: 6 

    • 2 1/2 tablespoons butter
    • 60g chopped carrots
    • 60g chopped scallion
    • 1 clove garlic, minced
    • 1.5L chicken stock
    • 100g orzo pasta or rice
    • 280g baby spinach leaves, torn or chopped
    • salt and ground black pepper to taste

    1. Melt butter in a pot over medium heat. Add carrots, scallion and garlic; cook and stir until scallion is soft, 1 to 2 minutes. Pour in chicken stock; bring to the boil. Add pasta and cook, stirring occasionally until tender yet firm to the bite, 5 to 10 minutes. Stir in spinach; cook until tender, 2 to 3 minutes more. Season with salt and pepper.
