    About this recipe: Roasted asparagus with cherry tomatoes, feta cheese and lettuce makes a salad that's so flavourful you don't even need a dressing.

    Serves: 4 

    • 1 bunch fresh asparagus, trimmed and cut into bite-size pieces
    • 2 tablespoons olive oil
    • 1 pinch garlic granules, or to taste
    • 225g lettuce leaves, cut into bite-size pieces
    • 180g cherry tomatoes, halved
    • 125g feta cheese, crumbled

    1. Preheat oven to 200 degrees C / Gas 6.
    2. Place asparagus in a large bowl. Drizzle olive oil over asparagus and season with garlic granules; toss well. Transfer asparagus to a baking tray.
    3. Bake in the preheated oven until asparagus becomes tender, about 20 minutes.
    4. Place lettuce in the same bowl used for asparagus; top with tomatoes, feta cheese and asparagus.

    As is, this recipe needed seasoning. While feta cheese is salty, it still needed salt and pepper.  -  15 May 2016  (Review from Allrecipes US | Canada)


    The salad is on the bland side, but simply adding salt and pepper helps tremendously! I'd recommend adding salt and pepper to the asparagus, along with the garlic powder and olive oil. I did like that this really didn't need a dressing and was tossed around in the bowl used for the asparagus. I also recommend only 15 mins on the asparagus, but that is personal preference. Once everything was tossed together, I did add a light drizzle of oil and some additional salt and pepper to taste. Delicious!  -  08 Feb 2016  (Review from Allrecipes US | Canada)
