Coconut oil oat biscuits

    Crumbly oat and coconut biscuits. Dare I say good with a smoothie for breakfast?! These biscuits are dairy free and egg free, and can be made gluten free if using gluten free porridge oats.

    Ingredients
    Makes: 1 dozen

    • 110g (4 oz) porridge oats
    • 30g (1 oz) caster sugar
    • 30g (1 oz) cornflour
    • 1 pinch salt
    • 30g (1 oz) dessicated coconut
    • 110g (4 oz) solid coconut oil, melted

    Method
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Measure out dry ingredients then stir in melted coconut oil.
    2. Spread onto greased foil lined tray and pack down with the back of a spoon.
    3. Put in preheated oven at 170 C / Gas 3 for about 15 minutes.
    4. Cut in tin when still hot then leave to cool in tin.
