About this recipe:Smoked mackerel is a delicious oily fish and an ideal substitute for tuna in this salad, packed with protein. Although you can use the traditional Niçoise ingredients, it's really adaptable depending on what you like, what you've got in the fridge and how many you are serving! Potatoes are optional for the carb dodgers! This is a lovely summery supper, lunch or to use as a filling for wraps.

Arrange the salad ingredients such as lettuce, tomatoes, red onion, gherkins, peppers and cucumber in a salad bowl. Arrange greens beans, olives and quartered new potatoes (if using) and on top.
Slice the hard boiled egg into quarters or more. Remove the skin from the mackerel and tear in to strips or chop if you want to avoid fishy fingers! Arrange both on top of the salad. Season with black pepper.
You can use any dressing you prefer but I mix apple cider vinegar with horseradish, mayonnaise, and some wholegrain mustard and drizzle that over the salad. Enjoy!
If I'm thinking ahead, I'll boil some extra green beans and potatoes with dinner the night before so I only have to think about boiling the egg for lunch.
