Traditional Italian almond biscuits

    These easy biscuits made with ground almonds and egg whites are traditionally made at Easter, usually in the shape of a lamb. They originate from the Italian region of Puglia where almonds grow abundantly. Serve with sweet wine or tea.

    Serves: 15 

    • 1kg almonds
    • 1kg caster sugar
    • 240g egg whites
    • 1 teaspoon vanilla extract
    • 1 teaspoons almond extract
    • icing sugar for rolling

    1. Preheat the convection oven to 190 C / Gas 5 . Line a baking tray with parchment.
    2. Grind the almonds in a food processor with the sugar. Add the egg whites, vanilla and almond extract. Mix until it comes together in a dough.
    3. Take some dough and roll in small logs about 7 or 8cm long. Roll in icing sugar and place on the baking tray. You can form them into shapes if you like.
    4. Bake in the preheated oven for 10 minutes. Remove from the oven and allow to cool.

    The illustration looks delicious.. I haven't tried the recipe yet BUT 1 kg of almonds and 1kg of sugar?? How many biscuits does this make? I should think that if making dozens of biscuits, more almond and vanilla essence would be needed.  -  03 Mar 2017
