About this recipe: Hi this is my recipe for chocolate cupcakes. The recipe makes between 12 to 16 standard sized cupcakes. Its a simple recipe and the cupcakes themselves are really easy to make but super effective. Everyone that's tried them has really liked them....and one of the guys I work with thought I had bought them! I guess that's when you know you did ok. I originally posted this recipe on my first blog but it was a blog about being a novice baker and cake maker, and a year on I probably shouldn't call myself a novice now.

  • 3 large organic eggs
  • 170g golden caster sugar
  • 8 tsps boiling water
  • 1 generous tsp of baking powder
  • 80g cocoa powder (sieved)
  • 180g baking spread or organic unsalted butter at room temperature
  • 120g self-raising flour (sieved)
  • 3-4 tbsps whole milk
  • For the butter cream icing: 600g icing sugar (sieved)
  • 80g cocoa powder (sieved)
  • 6 tbps whole milk
  • 200g soft room temperature unsalted butter
  • 3 tbps vanilla essence or paste
  • 400g double cream (if you want the buttercream to be really rich)


  1. Preheat the oven to 160 fan
  2. Cream the butter and sugar together
  3. Add the eggs one at a time while mixing (although sometimes if I'm in a hurry I just chuck everything in!)
  4. Sieve the flour and the cocoa powder into the mixture and mix well
  5. All the remaining ingredients and mix until smooth ans silky looking
  6. Line a miffin tray with cupcake cases
  7. Spoon in enough mixture to fill the cases about halfway
  8. Bake in the middle of the oven for about 15 minutes of until the cake tester comes out clean
  9. Leave to cool for about 40 minutes or if your like me and you don't have that much time then put them in the fridge to cool
  10. To make the butter cream dice the butter and put in a bowl with the sieved icing sugar and mix. This will be a bit messy so mix on a low spead to limit icing sugar dust
  11. Mix in the sieved cocoa powder and add the milk and cream
  12. Blend together until silky smooth and there are no lumps
  13. Decant into a piping bag or spoon on top of the cupcakes and decorate however you like
  14. Then eat eat


This recipe makes between 12 to 16 standard sized cupcakes. If you choose to make smaller cupcakes then use two muffin trays, keeping them as close to the center of the oven as you can. My oven is fan assisted but if yours isnt then bake at 323 F, 180 C or gas mark 3.
