Mantecados (Spanish shortbread)

    These biscuits are known as mantecados, montecaos, ghoriba, or Russian cakes. Measure the ingredients in the same size cup to get the right proportions (I use a small coffee cup). This is a vegan version of mantecados.

    Makes: 30 biscuits

    • 3 cups plain flour
    • 1 cup vegetable oil
    • 1 cup icing sugar
    • whole almonds
    • ground cinnamon or cardamom
    • icing sugar

    1. Preheat the oven at 180 C / Gas 4.
    2. Grease a baking tray with butter. In a bowl, mix the flour, oil, and sugar.
    3. Using a melon baller, scoop out small amounts of dough. Shape each piece by it rolling between the palms of your hands and transfer to the baking tray. Press an almond into some, flatten the others slighty and sprinkle some with cinnamon or cardamom, and leave some plain.
    4. Bake for 10 minutes. Remove from the oven and sprinkle the plain mantecados with icing sugar.
