About this recipe: This moist and flavourful Bundt cake has a fabulous texture, perfect for a simple and yet delightful afternoon tea. It will change the way you think about gluten free baking.

Makes: 1 Bundt cake

  • 240g gluten free plain flour
  • 140g ground almonds
  • 1 teaspoon xanthan gum
  • 300g caster sugar
  • 115g butter, softened
  • 2 teaspoons gluten free baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 160ml milk
  • 2 tablespoons icing sugar, for dusting

  1. Preheat oven to 170 C / Gas 3. Lightly grease a 23cm Bundt cake tin and dust with gluten free flour. Set aside.
  2. In a medium bowl, mix together gluten free flour, ground almonds and xanthan gum.
  3. In a separate bowl, combine sugar, butter, baking powder, salt and vanilla extract and whisk until smooth and fluffy.
  4. Beat in eggs, one at a time, mixing well after each addition. Stir in milk gently, alternating with the flour mixture. Ensure sure all ingredients are well mixed, and then beat for an additional minute. Pour cake mixture into prepared tin.
  5. Bake cake in the preheated oven for 50 to 60 minutes.
  6. Remove from oven, and let cool in tin for 10 minutes before inverting over a wire rack to cool completely.
  7. Once cooled, dust with icing sugar.
